An absolute family favorite! The hardest part is peeling and chopping the apples.
2 ½ cups all-purpose flour
1 cup plus 2 tablespoons firmly packed light brown sugar
¾ cup white sugar
4 teaspoons cinnamon, divided
¾ teaspoon salt
½ teaspoon ground ginger
¾ cup vegetable oil
1 teaspoon baking soda
1 teaspoon baking powder
1 pound Granny Smith or other tart apple, peeled, cored, and chopped
1 egg
1 cup buttermilk
- Preheat oven to 325 degrees. Butter and flour a 9-inch square pan. In a large bowl, mix flour, brown and white sugar, 2 ½ teaspoons cinnamon, salt, and ginger.
- Add oil and stir until mixture resembles coarse meal. Transfer ¾ cup of mixture to a separate bowl and add remaining cinnamon; this becomes the topping.
- Mix baking soda and baking powder in the original mixture. Add apples and stir to evenly distribute.
- Whisk together egg and buttermilk, then add to apple mixture, stirring until just combined. Pour into prepared pan and sprinkle with topping.
- Bake until tester inserted in the center comes out clean. Begin checking around 45 minutes, then check every 5 minutes until done.
